Ingredients (14)

175.00 g pasta — spaghetti
500.00 g pork — fillet, sliced
salt and freshly ground black pepper
oil
1.00 garlic — cloves, crushed
10.00 ml fresh ginger — grated
4.00 fresh chives — sliced
1.00 red pepper — seeded and diced
125.00 g mangetout
15.00 ml cornflour
30.00 ml soy sauce
30.00 ml sherry
15.00 ml vinegar — grape
50.00 ml water

Method:

Cook the spaghetti in rapidly boiling water till just soft. Drain and set aside, keeping it warm.
Season the pork with salt and pepper and fry in heated oil till brown on the outside. Remove from the pan and set aside.
Sauté the garlic, ginger, chives and red pepper in a little oil till soft. Add the mangetout and stir-fry for about 1 minute. Add the cornflour and the remaining ingredients. Simmer till the sauce thickens and return the pork to the pan. Heat till warmed through and serve immediately with the spaghetti.
Serves 3-4.
