Ingredients (17)

15.00 ml oil
1.00 kg beef mince — lean
45.00 ml soy sauce
sea salt and freshly ground black pepper
1.00 onion — large, chopped
2.00 garlic — cloves, crushed
2.00 cm fresh ginger — grated
1.00 green pepper — deseeded and cut into strips
1.00 red pepper — deseeded and cut into strips
65.00 ml raisins — seedless
440.00 g pineapple — tinned chunks
200.00 ml water
125.00 ml vinegar — white garpe
45.00 ml brown sugar — soft
1.00 lemon — juice only
15.00 ml cornflour — slurry
30.00 ml water

Method:

Heat a heavy-bottomed saucepan and add the oil. Add small quantities of mince at a time and loosen with a fork while stir-frying until lightly browned. Sprinkle with soy sauce, season generously with salt and pepper and remove from the pan. Stir-fry the onion, garlic, ginger and pepper strips in the remaining pan fat until soft. Add extra oil if necessary. Add the mince, raisins, and pineapple chunks and syrup. Mix the water, vinegar, brown sugar and lemon juice and pour over the mince mixture. Heat, stirring continuously until warmed through. Stir the cornflour paste into the liquid in the pan, and simmer until the sauce thickens slightly. Serve with rice or pasta.
