Ingredients (14)

3.00 ml black pepper — freshly ground
1.00 garlic — cloves, crushed
30.00 ml fresh ginger — finely grated
45.00 ml orange — zest only
4.00 fresh chives — chopped
1.00 red chilli — chopped
30.00 ml honey
30.00 ml soy sauce
200.00 ml fresh chillies — 573
sea salt and freshly ground black pepper
1.00 kg chicken — wings
15.00 ml fresh parsley — chopped
15.00 ml spring onion — chopped
orange — zest

Method:

Process the black pepper, garlic, ginger, orange rind, chives and chilli in a food processor to form smooth paste. Spoon into a mixing bowl and stir in the honey, soy sauce and oil. Season to taste with salt and freshly ground black pepper. Transfer the paste to a non-metallic dish and chill for at least 4 hours or overnight. Cover the chicken wings with the paste and grill in a griddle pan until golden brown and done. Scatter the parsley, spring onions and orange rind on top just before serving.
Serves 4-6.
