Sweet 'n sour baby onions

    baby onions
  • 30
    olive oil
  • 2
    whole cloves
  • 1
    bay leaf
  • 65
    red wine vinegar
  • 15
    white sugar
  • salt and freshly ground black pepper to taste


Bring a large saucepan of water to the boil. Add the unpeeled onions and cook for 5 minutes. Remove from the heat and allow the onions to cool before peeling, taking care to keep the whole onions intact. Heat the oil in a heavy-based saucepan over medium heat. Add the cloves, bay leaf and onions. Stir-fry lightly and heat for about 20 minutes, stirring frequently so the onions can brown evenly. Increase the heat and add the vinegar and sugar. Boil for 2 minutes or until the sauce becomes syrupy. Stir to coat the onions with the sauce. Season to taste with salt and pepper. Remove the cloves and bay leaf before serving.
