Sweet corn, spring onion and cheese fritters

  • 1x410
    creamed sweet corn
  • 4
    spring onions, sliced
  • 200
    mozzarella, cut into small cubes
  • 100
    Cheddar, grated
  • 2
    eggs, lightly beaten
  • 30
    parsley, chopped
  • 1
    chilli (optional)
  • 200
    self-raising flour
  • sunflower oil, for shallow frying
  • sour cream and salad, to serve


Mix together all the ingredients to form a smooth batter.

Heat a thin layer of oil in a large pan. Drop spoonfuls of the batter into the hot oil and fry for two minutes or until bubbles start to form on the surface of the fritters. Turn over and fry for a further minute or until golden.

Remove from the pan and place on paper towels to drain the excess oil. Serve hot with sour cream and a salad.
