1.00 Litres sour milk
300.00 g sugar
500.00 g margarine
4.00 eggs
3.00 kg flour — self-raising
15.00 ml Bicarbonate of soda
3.00 ml Cream of tartar
30.00 ml aniseed
5.00 ml salt

Method:

Preheat the oven to 180 ºC (350 ºF). Grease 2 large 37 x 13 x 10 cm pans.
Heat the sour milk, sugar and margarine together in a saucepan and stir until all the sugar has dissolved. Allow to cool slightly.
Beat the eggs and add to the mixture.
Sift the dry ingredients together and add to the margarine mixture.
Mix well and place in the greased pans. Use a spatula dipped in oil to shape the balls.
Bake for about 55 minutes or until a testing skewer comes out clean and the crust is pale brown.
Turn out onto a wire rack, allow to cool slightly and break into pieces. Dry at 100 ºC (200 ºF).
