Ingredients (11)

1 cup rice — brown wild rice and lentil mix
4 eggs — organic
500 g snoek — smoked
30 g fresh coriander
for the dressing:
1/2 onion — chopped
1/4 cup vinegar — red wine
1 Tbs honey
1/4 cup mayonnaise
1 Tbs curry powder — Cape Malay
dried chilli flakes
sea salt and freshly ground black pepper

Method:

Cook the rice according to packet instructions, boil the eggs for 8 minutes and peel, flake the snoek and remove all the bones.
For the dressing, soak the onion in the vinegar for 30 minutes, then blend with remaining ingredients.
Arrange rice, snoek and eggs on a platter, drizzle over the dressing, scatter with the coriander leaves and serve.
