Sweet-and-sour stir-fry

    sunflower oil

    cloves garlic, finely sliced

    freshly grated ginger

    baby beans, trimmed

    mangetout, trimmed

    spring onions, halved and cut lengthways

    soy sauce
  • 10
    ml
    sugar

    ml
    vinegar

Heat wok, then add oil and heat. Add garlic and ginger and cook for 1 minute. Add beans and fry for 2 minutes. Add mangetout and cook for a further 2 minutes, stirring continuously. Add spring onions and cook for 1 minute. The vegetables should be stir-fried until tender but still crunchy. Add remaining ingredients, stir for 30 seconds, then serve immediately. Serves 4.
