Ingredients (9)

15.00 ml sunflower oil
2.00 garlic — cloves, finely sliced
10.00 ml fresh ginger — freshly grated
250.00 g green beans — trimmed
200.00 g mangetout — trimmed
10.00 spring onions — halved, sliced
50.00 ml soy sauce
10.00 ml sugar
20.00 ml vinegar

Method:

Heat wok, then add oil and heat. Add garlic and ginger and cook for 1 minute. Add beans and fry for 2 minutes. Add mangetout and cook for a further 2 minutes, stirring continuously. Add spring onions and cook for 1 minute. The vegetables should be stir-fried until tender but still crunchy.
Add remaining ingredients, stir for 30 seconds, then serve immediately.
Serves 4.
