Sweet and sour skewers

Ingredients (11)

1/4 cup tamari sauce
1/2 cup honey
1/4 cup goji berries
1/4 cup tamarind — pulp
2 Tbs sesame oil — light
1 tsp garlic — cloves, chopped
1 tsp fresh ginger — chopped
salt — just a pinch
100 g broccoli — florets
100 g apricots — dried
100 g daikon — cubed

Method:

Blend all sauce ingredients together until smooth. Skewer broccoli, apricot and daikon together, alternating as you go.

Baste the skewers in the sauce until well coated. You can serve at this point or dry for 2-3 hours, this will warm and soften them slightly.

Preparing tamarind:
Take about ¼ C tamarind (usually comes seedless in a block). Pour over another ¼ cup of hot water and mash with a fork until loose and softened.

Remove all the hard fibrous pieces with your hands and use the remaining pulp in your recipe. You can use a spatula to push this pulp through a wire strainer if you have one.
