Sweet and sour pumpkin

  • 1
    pumpkin, peeled and cut into thin slices
  • 60
    olive oil
  • 4
    garlic cloves, peeled
  • 50
  • 50
    white wine vinegar
  • Good pinch of cinnamon
  • Handful of fresh mint leaves, chopped
  • Salt and ground black pepper to taste


10 mins
Heat the oil and garlic cloves in a large frying pan.
Add the pumpkin and cook until it chars around the edges, tossing and turning it frequently.
Add the sugar, vinegar and mint to the pumpkin and season with salt and ground black pepper.
Cook for 2 minutes, tossing the frying pan.
Serve immediately.
