Ingredients (8)

1 kg pumpkin — peeled and sliced
60 ml fresh chillies — 573
4 garlic — cloves, peeled
50 ml sugar
50 ml vinegar — white wine
cinnamon — ground
fresh mint — handful, chopped
salt and freshly ground black pepper — to taste

Method:

Heat the oil and garlic cloves in a large frying pan.
Add the pumpkin
and cook until it chars around the edges, tossing and turning it
frequently.
Add the sugar, vinegar and mint to the pumpkin and
season with salt and ground black pepper.
Cook for 2 minutes, tossing
the frying pan.
Serve immediately.
