Ingredients (10)

200.00 g white rice — uncooked
1.00 rice spice — sweet and sour mix
50.00 ml sunflower oil
500.00 g pork — fillet, thinly sliced
1.00 red pepper — sliced
1.00 mangetout
250.00 g button mushrooms — sliced
1.00 pineapple — diced
1.00 spring onions — a bunch
15.00 ml soy sauce — light

Method:

Place the rice, seasoning mix and 600 ml water in a saucepan. Bring to the boil, then reduce heat and simmer for 20 minutes, or until rice is tender. Drain and set aside.
Heat half the oil in a wok or large frying pan. Fry pork slices over a high heat until cooked through. Remove from the pan and add remaining oil.
Once hot, add red pepper, mangetout, cut into 2 cm pieces, mushrooms and pineapple. Stir-fry over high heat until just tender.
Add spring onion, cut into 2 cm pieces, and soy sauce and stir-fry for 30 seconds. Add cooked rice and pork slices. Stir-fry until heated through, then serve. Serves 4.
