Sweet-and-sour pork stir-fry

    uncooked white rice
  • 1
    packet sweet-and-sour rice seasoning mix
  • 50
    sunflower oil
  • 500
    pork fillet, thinly sliced
  • 1
    red pepper, sliced
  • 1
    small packet mangetout
  • 250
    fresh button mushrooms, sliced
  • 1
    pineapple, sliced and cut into pieces
  • 1
    bunch spring onions

    light soy sauce

Place the rice, seasoning mix and 600 ml water in a saucepan. Bring to the boil, then reduce heat and simmer for 20 minutes, or until rice is tender. Drain and set aside. Heat half the oil in a wok or large frying pan. Fry pork slices over a high heat until cooked through. Remove from the pan and add remaining oil. Once hot, add red pepper, mangetout, cut into 2 cm pieces, mushrooms and pineapple. Stir-fry over high heat until just tender. Add spring onion, cut into 2 cm pieces, and soy sauce and stir-fry for 30 seconds. Add cooked rice and pork slices. Stir-fry until heated through, then serve. Serves 4.
