Sweet and sour beetroot

    large cooked beetroot, peeled
  • 45
    g
    butter
  • 5
    ml
    salt and black pepper
  • 60
    ml
    apple cider (use more or less to taste)
  • 45
    g
    brown sugar
 

Method

 
1. Finely grate beetroot into a saucepan, and add rest of ingredients. Simmer until completely heated through. Adjust seasoning - beetroot sauce should have a sharp, piquant taste. Serve very hot.
