Ingredients (8)

600.00 g cape whiting — fillets
lemon juice — fresh
seasoning
flour — cake
1.00 eggs — beaten
breadcrumbs
oil — for frying
SWEET AND SOUR SAUCE
500.00 g stir-fry vegetables

Method:

Cut the fish into strips, sprinkle with lemon juice and season. Drain and toss in flour. Dip into egg and then into crumbs. Leave in fridge for 20 minutes to allow coating to set. Heat the sauce through and keep warm. Heat enough oil to shallow-fry fish until just cooked and a light golden colour. Stir-fry the vegetables and spoon onto a serving platter. Arrange the fish on top and pour over the sauce. Serve immediately.
Serves 4-6.
