Ingredients (8)

3.00 kg pork — pickled leg
30.00 g sugar
1.00 bay leaves
5.00 ml pickling spice
Glaze
1.00 eggs
30.00 ml mustard — prepared
15.00 ml sugar
75.00 ml breadcrumbs

Method:

Place pork in large saucepan and add water to almost cover leg. Add remaining ingredients and bring to boil. Boil gently for 30 minutes per 500 g, or until meat begins to come away from bone.
Remove from saucepan and peel away skin. Preheat oven to 220 ºC.
GLAZE: Mix egg, mustard and sugar and spread over pork. Sprinkle over breadcrumbs and bake for 10 minutes or until brown.
Serve hot or cold.
