Sunday sarmie

  • olive oil or butter for frying
  • 250
    fresh button mushrooms, sliced
  • salt and milled pepper
  • 2
    large ripe avocados, mashed
  • lemon juice
  • 1
    long French loaf
  • fresh Parmesan cheese shavings
  • watercress sprigs for decoration


Heat oil or butter and sauté mushrooms. Season to taste and set aside. Season mashed avocados with lemon juice, salt and pepper and set aside. Cut French loaf into 4. Halve each wedge lengthways and pile avocado liberally onto each. Top with warm mushrooms and decorate with shavings of Parmesan and sprigs of watercress. Serve with a large mixed salad.
