Ingredients (8)

olive oil — or butterr, for frying
250.00 g button mushrooms — sliced
salt and freshly ground black pepper
2.00 avocado — mashed
lemon juice
1.00 french loaf — long
parmesan cheese — shavings
watercress — to garnish

Method:

Heat oil or butter and sauté mushrooms. Season to taste and set aside.
Season mashed avocados with lemon juice, salt and pepper and set aside.
Cut French loaf into 4. Halve each wedge lengthways and pile avocado liberally onto each. Top with warm mushrooms and decorate with shavings of Parmesan and sprigs of watercress.
Serve with a large mixed salad.
