Sun-dried tomato and feta pasta

    olive oil

    yellow peppers, sliced
  • 8
    black olives, pitted and sliced
  • 3
    fresh tomatoes, dropped
  • 1
    packet marinated sun-dried tomatoes
  • 40
    freshly shredded basil
  • 150
    feta cheese, cubed

1. Cook the pasta according to pack instructions until al dente. 2. While pasta is cooking, heat oil in a saucepan and sauté yellow peppers until soft. Add olives, tomatoes and sun-dried tomatoes and bring to the boil. Reduce heat and simmer for 10 minutes. 3. Remove from the heat and add basil and seasoning to taste. Mix into hot drained pasta. Add cheese and toss to combine. Serve immediately.
