Ingredients (10)

15.00 ml butter
4.00 spring onions — sliced
400.00 g peas — frozen
15.00 ml fresh mint — chopped
500.00 ml milk
125.00 ml cream
salt and freshly ground black pepper
85.00 ml finely
sun-dried tomatoes — chopped
8.00 bacon — rindless rashers, grilled

Method:

Melt butter in saucepan, add spring onions and cook gently over low heat for 2 minutes. Add peas and mint and cook for a further 2 minutes.
Remove from stove and stir in milk and cream. Blend in a food processor or blender until smooth. Season to taste.
Refrigerate until cold and serve in little bowls, each garnished with a spoonful of chopped sun-dried tomato and 2 bacon rashers.
