Summer gin cocktails

A refreshing cocktail perfect for a scorching summer day from the fabulous Heinstirred.

Ingredients (9)

8 fresh basil
8 chopped
2 Tbs castor sugar
3 Tbs lime juice
3 gin
ice
soda water
lime — slices
fresh basil — and fresh mint, to garnish

Method:

Tear the basil and mint leaves and place in a cocktail shaker with the sugar.

Using a muddler or a wooden spoon handle bash the leaves and sugar until fine and the mixture has turned green.

Add the lime juice and gin and shake until well combined.

Strain the mixture, place some ice cubes into two tumblers and pour the strained gin mixture into the glasses.

Add a few slices of lime, top with soda water, garnish with a few basil and mint leaves and serve.
