Summer bean salad

Servings 6


  • 250 ml each sugar beans and butter beans, soaked overnight and cooked (approx. 2 hours)
  • 1 x 410 g can peas, drained
  • 1 x 410 g can beans in tomato sauce
  • 45 ml atchar
  • 1 spring onion, thinly sliced
  • 2 medium tomatoes, diced
  • 2 stalks celery, chopped (optional)
  • 3 eggs, hard-boiled and sliced
  • 250 ml French or Italian dressing


In a large bowl, mix together the beans and peas.
Add all remaining ingredients, except the eggs and dressing.
Toss lightly to mix, top with boiled eggs and pour dressing over.
