Chicken salad with dried apricots

Ingredients (11)

300 g pasta — shapes
20 ml curry powder — mild
125 ml mayonnaise
40 ml chutney
125 ml yoghurt — Bulgarian
30 ml lemon juice
4 chicken breast fillets — smoked, diced
125 ml pecan nuts — chopped
100 g apricots — dries, soft and chopped
50 ml currants
fresh parsley — handful chopped

Method:

Cook the pasta in salt water until al dente, and drain.

Whisk the curry powder, mayonnaise, chutney, yoghurt or sour cream, and lemon juice together and season with salt and pepper. Stir the mixture through the pasta.

Add the chicken cubes, nuts, apricots and currants to the pasta, followed by the parsley.
