Stuffed tortillas

  • 600
    feta cheese, crumbled
  • 150
    grated Parmesan cheese
  • 30
    chopped fresh parsley
  • 15
    marinated sun-dried tomatoes, quartered
  • 15
    black olives, pitted and quartered
  • 2
    freshly ground black pepper to taste
  • 8

    oil for brushing


Lightly mix the feta cheese, Parmesan cheese, parsley, sun-dried tomatoes, olives and pepper. Place 4 tortillas on a work surface and divide the cheese mixture among them. Top with the remaining tortillas. Lightly grease a large pan with oil and place the pan on top of a grid over medium-hot coals. Fry the tortilla sandwiches one by one in the pan until the cheese just begins to melt. Turn once. Cut into quarters and serve.
