Ingredients (8)

600.00 g feta cheese — crumbled
150.00 ml parmesan cheese — grated
30.00 ml fresh parsley — chopped
15.00 sundried tomatoes — marinated, quartered
15.00 olives — black, pitted and quartered
2.00 ml freshly ground black pepper — to taste
8.00 tortillas
10.00 ml oil — for brushing

Method:

Lightly mix the feta cheese, Parmesan cheese, parsley, sun-dried tomatoes, olives and pepper. Place 4 tortillas on a work surface and divide the cheese mixture among them. Top with the remaining tortillas. Lightly grease a large pan with oil and place the pan on top of a grid over medium-hot coals. Fry the tortilla sandwiches one by one in the pan until the cheese just begins to melt. Turn once. Cut into quarters and serve.
