Ingredients (11)

4.00 potatoes — medium
oil — for deep frying
15.00 ml butter
1.00 green pepper — thinly sliced
1.00 onion — chopped
45.00 ml flour
400.00 ml milk
5.00 ml mustard — powder
5.00 ml jam — smooth, apricot
185.00 g tuna — tinnned in water, drained
160.00 ml mozzarella cheese — grated

Method:

1. Bake potatoes in their jackets until cooked through. Cut in half and carefully scoop out the potato flesh, leaving a shell.
2. Heat the oil and fry potato shells until golden brown and crispy; or simply set aside and add filling, without frying.
3. Melt butter and fry the pepper and onion for about three minutes. Add the flour and cook for a minute before whisking in the milk to form a smooth white sauce. Season with salt and pepper, mustard powder and apricot jam.
4. Mix in the mashed potato and tuna and fill the potato shells. Top with mozzarella and grill until golden. Serve with salad.
