Ingredients (7)

12.00 pork loin chops — (with a 2mm layer of fat)
250.00 g spinach — chopped, steamed
250.00 ml feta cheese — crumbled
65.00 ml breadcrumbs — white
50.00 ml butter — melted
salt and freshly ground black pepper — to taste
50.00 ml oil

Method:

Preheat the oven to 160 ºC. Cut a pocket in the round, fleshy side of each chop. Mix the spinach, cheese, crumbs and butter, season liberally and spoon into the pocket of each chop. Secure with a cocktail stick and season. Heat the oil and brown the chops on both sides. Place them in the oven and bake for 15 minutes or until just done. Serve with oven-roasted potato wedges and stir-fried vegetables.
