Stuffed pork chops

    pork loin chops with a 2-mm layer of fat
  • 250
    spinach, chopped and steamed until slightly wilted

    feta cheese, crumbled
  • 65
    fine, dry white breadcrumbs
  • 50
    melted butter, with a few cloves garlic (optional)
  • salt and black pepper to taste

Preheat the oven to 160 ºC. Cut a pocket in the round, fleshy side of each chop. Mix the spinach, cheese, crumbs and butter, season liberally and spoon into the pocket of each chop. Secure with a cocktail stick and season. Heat the oil and brown the chops on both sides. Place them in the oven and bake for 15 minutes or until just done. Serve with oven-roasted potato wedges and stir-fried vegetables. Serves 12.
