Ingredients (18)

6.00 pepper — green, red, yellow or black
VEGETARIAN FILLING
250.00 g mushrooms — finely chopped
500.00 ml breadcrumbs — fresh, brown
1.00 onion — small, chopped
250.00 ml cheddar cheese — grated
1.00 eggs — beaten
250.00 ml milk
sea salt and freshly ground black pepper
15.00 ml fresh oregano — chopped
60.00 g butter
MINCE MEAT FILLING
2.00 bread — white, slices
450.00 g pork mince — (or beef mince)
1.00 onion — small, chopped
1.00 eggs — beaten
salt and freshly ground black pepper
30.00 ml fresh basil — finely chopped
6.00 tomatoes — small
30.00 ml oil

Method:

VEGETARIAN FILLING
1. Combine all the filling ingredients except the butter or margarine. Divide filling and stuff peppers.
2. Place in a well-greased ovenproof dish, dot well with butter and bake at 180 ºC for 45 to 60 minutes. Serve immediately.
MINCE MEAT FILLING
1. Soak bread in 150 ml warm water. Squeeze out excess moisture and place bread in a bowl.
2. Add the rest of the ingredients and mix well using two forks or clean fingers.
3. Fill 6 peppers with stuffing, and replace lids. Peel and halve tomatoes. Grease an ovenproof dish with oil, place peppers and tomato halves in the dish and season to taste. Bake for 45 minutes at 200 ºC.
