Stuffed pawpaw

    pawpaw or melon
  • 65
    olive or peanut oil
  • 2
    palm oil
  • 1
    small onion, cut thinly into rings
  • 1
    small aubergine, thinly sliced lengthways
  • 2
    small carrots, thinly sliced lengthways
  • 4
    medium okra, sliced lengthways
  • red sweet pepper, seeded and sliced
  • yellow sweet pepper, seeded and sliced
  • salt and milled black pepper to taste


Halve pawpaw and scoop out seeds. Using a melon scoop, scoop out 8 balls. Wrap pawpaw halves in aluminium foil and heat for 10 minutes at 120 ºC. Heat olive oil in a frying pan and sauté onion for 5 minutes. Add all other ingredients and stir-fry for 15 to 20 minutes, adding salt and pepper to taste. Unwrap pawpaw halves and fill with stir-fried vegetables. Top with pawpaw balls and garnish with a sprig of fresh coriander.
