Stuffed mushrooms

  • 2
    large fresh black mushrooms
  • stock cube
  • 80
    stock cube dissolved in boiling water
  • 15

    small onion, finely chopped
  • 50
    bacon, finely chopped
  • 125
    crumbly cottage cheese
  • salt and freshly ground black pepper to taste
  • 2
    origanum, chopped
  • 1
    sprig parsley, chopped
  • 2
    slices bread, toasted

Switch on the oven grill.
Wipe the mushrooms with a damp cloth and dunk in the boiling stock for 1 minute.
Drain the mushrooms and place on a baking tray, stems facing up.
Melt the butter and fry the onion and bacon until the onion is translucent.
Cool slightly.
Mix the onion mixture with the cottage cheese and seasoning.
Spoon on top of the mushrooms.
Grill for about 5 minutes or until golden brown.
Serve hot on toast.
Garnish with parsley.
Serves 2.
