Ingredients (15)

1.00 kg calamari — tubes
15.00 ml canola oil
4.00 spring onion — chopped
1.00 garlic — cloves, crushed
250.00 ml brown rice — cooked
15.00 ml fresh oregano — chopped
salt and freshly ground black pepper
tomato sauce
15.00 ml margarine
1.00 onion — chopped
1.00 garlic — cloves, chopped
410.00 g tomatoes — whole, peeled
30.00 ml fresh parsley — chopped
15.00 ml fresh basil — chopped
sea salt and freshly ground black pepper

Method:

1. Finely chop 1 calamari tube for the stuffing.
2. Heat the oil and sauté spring onions and garlic. Add remaining ingredients and mix well.
3. Stuff calamari tubes and secure them with toothpicks.
4. Prepare tomato sauce heat the margarine and sauté onion and garlic. Then add remaining ingredients, cover and simmer for 15 minutes or until thick. Add calamari tubes to tomato sauce. Cover and simmer for 20 minutes, until calamari is tender.
