Stuffed baby chicken with nutty celery mash and mushrooms

Ingredients (17)

STUFFING:
4 garlic — cloves, finely chopped
1 celery — finely chopped
1 onion — small, chopped
3 heaped tsp mushrooms — powder
2 fresh rosemary — sprigs, finely chopped
fresh thyme
1 fresh chillies — finely chopped
1 lemon — juice only
Chicken:
freshly ground black pepper
sea salt — smoked
sesame oil
chicken — baby
Mash:
5 potatoes
handful celery stalks
1 tsp peanut oil
1 tsp sesame oil
courgettes — baby

Method:

Stuffing:
Mix everything together.

Preheat the oven to 180
Chicken:
Grind together pepper corns and smoked salt, flavour the
chickens inside and outside with the salt & pepper mixture.
Stuff the
chickens with the stuffing; rub some sesame seeds over the chicken.
In a covered ovenproof dish grill the chicken for
about 25 minutes in the oven, then add the mushrooms and
cover and grill for another 5 minutes.
Uncover and bake another 10
minutes to give the chicken some colour.

Mash:
Cook the potatoes until done.
Mash and add the oils, work through the mash, add the celery leaves and mix into the mash.
Grill some baby marrows on a griddle pan to serve on top of the mash.
