Stuffed baby chicken with nutty celery mash and mushrooms

  • Stuffing:
  • 4
    cloves garlic, finely chopped
  • 1
    stems celery, finely chopped
  • 1
    small onion, finely chopped
  • 3 heaped
    dry mushroom powder
  • 2
    sprigs rosemary, finely chopped
  • Couple of sprigs of thyme, finely chopped
  • 1
    chili, finely chopped
  • 1
    lemon, juiced
  • Chicken:
  • black pepper
  • smoked sea salt
  • sesame oil
  • baby chickens
  • Mash:
  • 5
  • handful
    roughly chopped celery leaves
  • 1
    peanut oil
  • 1
    sesame oil
  • baby marrows to top

Mix everything together.

Preheat the oven to 180
Grind together pepper corns and smoked salt, flavour the chickens inside and outside with the salt & pepper mixture.
Stuff the chickens with the stuffing; rub some sesame seeds over the chicken.
In a covered ovenproof dish grill the chicken for about 25 minutes in the oven, then add the mushrooms and cover and grill for another 5 minutes.
Uncover and bake another 10 minutes to give the chicken some colour.

Cook the potatoes until done.
Mash and add the oils, work through the mash, add the celery leaves and mix into the mash.
Grill some baby marrows on a griddle pan to serve on top of the mash.
