Ingredients (10)

3.00 avocado — halved
1.00 bananas — small, sliced
250.00 g bacon — chopped and fried
freshly ground black pepper
lemon juice
RICH EGG AND BUTTER SAUCE
175.00 g butter
45.00 ml water
3.00 eggs — just the yolks
salt and freshly ground black pepper
1.00 lemon — juice only

Method:

Place each avocado half in an individual bowl small enough to fit snugly. Divide the banana slices and bacon between the avocado halves and season with a little pepper and lemon juice. Melt the butter and skim off the foam. Beat the egg yolks and water together until light and foamy. Season and whisk in a double boiler over hot water until the mixture thickens slightly and the sauce falls in a ribbon from the whisk. Remove the top half of the double boiler from the heat and slowly beat in the butter, beating until the sauce thickens. Add the remaining butter (do not add the milky residue). Beat until well blended and spoon over the stuffed avocado halves. Grill under the oven grill set on medium until pale brown, taking care not to burn the avocados or filling. Garnish with extra diced avocado and serve immediately.
