Ingredients (10)

8.00 eggs — extra-large, whites only
500.00 g icing sugar
10.00 ml vanilla — coffee or rum essence
500.00 g strawberries — washed and hulled
5.00 ml vinegar — white
50.00 ml castor sugar
50.00 ml jelly — apple
500.00 ml cream — fresh, chilled
50.00 ml castor sugar
5.00 ml vanilla — essence

Method:

Preheat the oven to 120 ºC (240 ºC). Line 3 baking trays with baking or waxed paper and draw circles, 22 cm in diameter, on each one. Place the egg whites in a clean glass bowl. Place the glass bowl over a saucepan containing hot water (the water must not touch the bottom of the glass bowl). Heat gently and beat the egg whites till soft peaks form. Sift small quantities of the icing sugar over the egg whites and beat till the meringue is stiff. Flavour with any of the essences.
Spoon two thirds of the meringue into a piping bag with a round nozzle, about 10-12 mm wide, and pipe a solid meringue spiral. Then pipe 2 circles to form 2 rings. Bake in the oven for 1 hour, switch off the oven and leave the meringues to cool inside. Remove the paper and leave to cool completely. Place the meringue spiral on a lined baking tray, dot with a little of the remaining meringue and place a meringue ring on top. Secure the second meringue ring to the first one in the same way. Spoon the remaining meringue into a piping bag with a star nozzle and pipe vertical lines on the outside to create a basket effect. Dry in the oven for about 1 hour. Then cool.
Sprinkle the vinegar and castor sugar over the strawberries and leave in the fridge until the meringues are cool. Drain, adding the liquid to the dissolved apple jelly. Pour over the strawberries. Whip the cream, castor sugar and vanilla essence together till thick and spoon a layer of the cream into the prepared meringue basket. Reserve a few of the best strawberries for decoration. Cut the rest in half and arrange on top of the cream. Spoon the remaining cream on top and decorate with the whole strawberries and some strawberry leaves.
Chill for 2 hours at the most.
