Ingredients (16)

60.00 g butter
30.00 ml water
30.00 ml milk
1.00 eggs — large
85.00 g castor sugar
2.00 ml vanilla — essence
110.00 g flour — cake
salt — pinch
7.00 ml Baking powder
FILLING
400.00 g strawberries — hulled, liquidised
1.00 instant pudding — cheesecake
ICING
250.00 g white chocolate
200.00 ml cream
15.00 g butter
50.00 g icing sugar

Method:

1. Heat the butter, water and milk until the butter has melted, but do not boil.
2. Whisk the egg with the sugar until pale, thick and creamy. Add the vanilla essence.
3. Sift the flour and salt together. Fold the hot mixture and the dry ingredients alternately into the egg mixture using a metal spoon.
4. Fold in the baking powder. Pour mixture into a lined and greased 20 cm cake tin and bake in a preheated oven at 180 ºC for about 20 minutes.
5. Leave to cool in tin for 5 minutes, then turn out on to a cooling rack. Once the cake has cooled completely, slice it into 3 layers.
6. FILLING: Add liquidised strawberries to the made-up cheese cake mix and use to sandwich together cake layers in tin. Place in the fridge to set.
7. ICING: Place ingredients for the icing in a glass bowl over boiling water until chocolate melts. Leave to cool, then pour over cake. Place in the fridge to set.
8. Decorate with fresh berries.
