Strawberry crackles

  • 1
    packet instant strawberry cheesecake mix
  • 200
  • 2
    red apples, sliced
  • black grapes
  • mint


1. Add cheesecake mix to 300 ml cold water. Beat until well mixed and smooth and divide between 6 ramekins. Place in fridge to set. 2. Place sugar in a heavy-based saucepan and dissolve over a low heat without stirring. Tilt the pan from side to side to make sure that the sugar colours evenly. 3. As soon as the syrup is a pale caramel colour, pour over the back of a spoon onto the chilled strawberry filling to give a thin layer. Leave to set. 4. Serve decorated with thinly sliced apple and a sprig of mint.
