Strawberry blintzes

  • 1
    box instant pancake mix
  • oil
  • 1
    packet instant strawberry cheesecake mix
  • vegetable oil for frying
  • icing sugar
  • berry coulis or honey
  • sour cream


1. Add pancake mix to 600 ml cold water. Beat until smooth. Add 30-40 ml oil to mixture and beat well. Leave to stand for at least 10 minutes. Make pancakes and set aside. 2. Add cheesecake mix to 300 ml cold water. Beat until well mixed and smooth. Place in fridge to partially set. 3. Divide the filling between the pancakes, placing it in the centre of the pancake. 4. Enclose the filling by folding in two edges and then folding up. 5. Shallow-fry in vegetable oil until crisp. Remove with a slotted spoon and drain on absorbent paper. 6. Dust with icing sugar and serve with berry coulis and sour cream.
