Stir-fried vegetables

    leeks or 1 onion, halved and sliced in thin rings
  • 4
    medium carrots, sliced into thin strips
  • 100
    young green beans, cut in half
  • 100
    broccoli, broken into small florets
  • 3
    baby marrows, sliced into thin strips
  • each red, yellow and green pepper, seeded and sliced into thin strips
  • 250
    fresh mushrooms, sliced
  • 1
    small, white cabbage, halved and shredded


Slice all the vegetables ensuring the pieces are about the same size as this ensures even cooking. Heat a little oil until hot in a largish pan. Reduce the heat and stir-fry the leeks, carrot strips and beans until the leeks are tender and translucent. Add the broccoli, baby marrows and peppers and continue stir-frying. Lastly, add the mushrooms and cabbage and stir-fry until done but crunchy. Cover and turn off the heat Serve with the chicken and rice.
