Stir-fried rice

  • handful of chives, chopped
  • 1
    red pepper, seeded and diced
  • 1
    green pepper, seeded and diced
  • 4
    x 250 ml cooked rice
  • 4
    eggs, whisked
  • salt and freshly ground black pepper
  • 30
    chopped fresh coriander


about 8 minutes
Heat the oil in a large wok or pan. Add the chives and red pepper and stir-fry over fairly high heat for two to three minutes.
Add the cooled cooked rice and stir-fry for about five minutes or until heated through.
Add half the eggs, stirring until set.
Season well with salt and freshly ground black pepper and stir in the chopped coriander.
Prepare an omelette using the remaining eggs, roll up and slice.
Spoon the stir-fried rice into bowls and top with omelette slices.
