Stir-fried pork with pesto

    olive oil

    boneless pork (leg, fillet or thick rib), cut into thin strips

    fresh mushrooms, thinly sliced
  • 1
    bunch spring onions, sliced
  • 1
    clove garlic, crushed
  • 150
    fresh cream

    basil pesto
  • 4
    sun-dried tomatoes, drained and cut into strips
  • finely grated mozzarella cheese to serve (optional)


Heat the oil in a wok or heavy-based saucepan and stir-fry the pork strips quickly for eight to 10 minutes or until nearly cooked.
Add the mushrooms, spring onions and garlic, and continue frying for a few minutes.
Add the cream and basil pesto and heat through.
Stir in the sun-dried tomatoes and season with salt and freshly ground black pepper to taste.
Serve with basmati rice or penne pasta, sprinkled with grated mozzarella.
A combination of mushrooms, such as oyster, button and portabellini works really well in this dish.
