Ingredients (9)

15.00 ml oil
1.00 spring onions — sliced diagonally
8.00 eggs — extra-large at room temperature
10.00 ml fresh parsley — chopped
30.00 ml stock — or water
5.00 ml mustard — powder
3.00 ham — slices, chopped
salt and freshly ground black pepper
fresh parsley — chopped, to garnish

Method:

Heat oil in a wok, add spring onions and stir-fry briefly until glossy.
Meanwhile, beat eggs, parsley, stock and mustard powder together lightly.
Add egg mixture to wok and stir-fry over high heat until eggs just begin to set. Add ham and continue to stir-fry until done.
Remove from heat, season to taste, scatter remaining parsley over to garnish and serve immediately.
