Stir-fried eggs

    bunch spring onions, sliced diagonally
  • 8
    extra-large eggs at room temperature
  • 10
    chopped parsley
  • 30
    stock or water
  • 5
    mustard powder
  • 3
    slices ham, chopped
  • salt and milled pepper
  • chopped parsley to garnish


Heat oil in a wok, add spring onions and stir-fry briefly until glossy. Meanwhile, beat eggs, parsley, stock and mustard powder together lightly. Add egg mixture to wok and stir-fry over high heat until eggs just begin to set. Add ham and continue to stir-fry until done. Remove from heat, season to taste, scatter remaining parsley over to garnish and serve immediately.
