Stir-fried chicken with cashew nuts

Ingredients (12)

300.00 g chicken breast fillets — cubed
25.00 ml soy sauce
5.00 ml cornflour
25.00 ml oil
1.00 onion — sliced into rings
1.00 green pepper — cut into strips
2.00 garlic — cloves, crushed
100.00 g mushrooms — sliced
salt
freshly ground black pepper
ginger — ground
100.00 g cashew nuts — roasted

Method:

Marinate the chicken cubes in half the soy sauce and cornflour for 10 minutes.

Heat the oil in a pan and sauté the onion and green pepper until soft. Add the garlic and mushrooms and sauté until the mushrooms are done and most of the liquid has evaporated.

Add the chicken, the remaining soy sauce and seasonings to taste and fry until done. Remove from the heat and add the cashew nuts. Mix well and serve immediately with Chinese rice.
