Stir-fried calamari

  • 1
    green pepper
  • 1
    onion, finely chopped
  • 1
    clove garlic, crushed
  • olive oil
  • 1
    tomato, peeled and finely chopped
  • 2
    fresh mushrooms, sliced
  • 3
    calamari steaks, cut into strips
  • 5
    lemon juice
  • salt and pepper


Fry the green pepper, onion and garlic in olive oil until tender. Add the tomato and stir-fry lightly. Add the mushroom and stir-fry. Set the tomato mixture aside, keeping warm. Rapidly fry the calamari strips in oil until just done, taking care not to overcook them as they will become tough. Season with lemon juice and salt and pepper to taste. Stir in the tomato sauce and serve with rice. Serves 2.
