Sticky star anise beef short ribs

Ingredients (11)

2 kg beef — short ribs
6 cinnamon — stick
6 star anise — whole
5 cm fresh ginger — peeled, sliced
1/4 cup brown sugar
3/4 cup oyster sauce
3/4 cup vinegar — rice wine
1 cup water
lemon — juice only
rice — and fresh coriander, to serve
2 cloves garlic — cloves, crushed

Method:

Preheat the oven to 180ºC.

Place the beef, cinnamon, star anise, ginger, garlic, sugar, oyster sauce, vinegar and water in a baking dish and cover tightly with aluminum foil.

Roast for 2 hours.

Remove foil and roast for a further 30 minutes or until tender and sticky.

Squeeze the lemon juice over and serve with steamed rice and fresh coriander or choose a side dish below.

Pick a side:

•    Mashed potatoes drizzled with chilli oil
•    Sesame peanut noodles tossed in sesame oil, sesame seeds, crushed toasted peanuts, sprouts and fresh coriander
•    Stir-fried Asian greens with soy sauce, ginger and garlic
