Sticky lime pudding

  • 1/2 cup sugar
  • 30
    plain flour, sifted juice and grated rind of 2 ripe limes
  • 250
  • 2
    free range eggs, separated


50 minutes

Beat butter and sugar together well.
Add flour, lime juice and rind.
Add milk and egg yolks.
Beat egg whites until stiff and fold into the mixture.
Pour into a buttered ovenproof dish and bake in a preheated 180 °C oven for 30-50 minutes, until the top is golden.
Serve with frozen yoghurt.
(Don't panic when you take it out and see that the bottom is runny - this is how it's meant to be.

If the limes are very small use 4 instead of 2.
It is vital to use fresh eggs.
