Sticky chicken with mango salsa

Ingredients (9)

2.00 chicken breast fillets
0.50 lemon juice
1.00 garlic — cloves, crushed
5.00 ml wholegrain mustard
15.00 ml honey
Salsa
1.00 mango — peeled and diced
1.00 red onion — chopped
4.00 cherry tomatoes — chopped
1.00 lemon — zest and juice

Method:

Flatten the breasts by covering them with clingfilm and bashing with the back of a pan.
Mix the lemon juice and garlic, brush the chicken with the mixture and season.
Set aside for 10 mins whilst you make the salsa.
Mix all the salsa ingredients together.
Mix the mustard and honey and set aside.
Meanwhile heat a heavy-based non-stick pan until hot and add a little vegetable oil.
Pan-fry the breasts for 1-2 minutes on each side.
Spread each breast with the mustard and honey mixture.
Cover and braise over low heat until just done but not dry (about 2 mins).
Serve the chicken with the salsa and some boiled baby potatoes.
