Stewed ox tripe (Ulusu Lwenkomo)

  • 1
    stomach (ulusu)
  • 1
    intestines (amathumbu)
  • salt and pepper to taste


Clean stomach and intestines thoroughly and rinse under cold running water. Place in saucepan and cover with salted water. Bring to the boil and simmer gently for three hours or until very soft.
