Ingredients (11)

MARINADE
500.00 ml water — hot
125.00 ml tomato purée
125.00 ml apples — purée
125.00 ml soy sauce
65.00 ml brown sugar
65.00 ml honey
7.00 ml salt
2.00 ml freshly ground black pepper
2.00 ml ginger — ground
375.00 ml sunflower oil
1.00 lamb — rack sliced into ribs

Method:

Mix the ingredients for the marinade and set aside to cool. Place the ribs in the marinade and leave overnight. Preheat the oven to 170 ºC. Arrange the ribs in an oven dish and roast in the oven or braai over medium coals until done and the fat is well-cooked. Take care not to overcook or they’ll be too dry.
