Steamed vegetables with quick hollandaise sauce

    ml
    butter
  • 2
    lemons, juice
  • salt and white pepper to taste
  • 500
    ml
    mayonnaise
  • 500
    g
    mixed vegetables (e.g. butternut, broccoli, cauliflower, mushrooms, celery), blanched
  • paprika
 

Method

 
Melt butter in a saucepan, add lemon juice, salt and pepper and stir to combine. Stir in mayonnaise and heat to just below boiling point. Place blanched vegetables on a serving platter or individual plates and top with sauce. Sprinkle with paprika and serve immediately, as a side dish or starter.
