Steamed salmon, Quinoa and red onion dressing

1.00 quinoa
150.00 g salmon — Norwegian, fillets
40.00 g fennel — baby
1.00 fresh chillies — 573
1.00 lemon juice
1.00 honey

Method:

Mix together the dressing ingredients and set aside.
Rinse the quinoa well, then place in a medium saucepan with two cups of cold water. Bring to the boil, then reduce heat to low, cover and simmer for about ten minutes or until all the water has evaporated and the quinoa is tender and translucent.
Season the salmon and place it in a steamer above a saucepan of simmering water. Steam for six minutes or until cooked through.
Divide the quinoa between the plates, top with the fennel, salad leaves and a piece of salmon. Spoon over the dressing and serve.
