Ingredients (7)

110.00 g butter
110.00 g brown sugar — soft
2.00 eggs
60.00 g breadcrumbs — fresh
5.00 ml vanilla — essence
110.00 g flour — self-raising, sifted
125.00 ml jam

Method:

Beat butter and sugar until fluffy and pale. Add eggs, 1 at a time, beating after each addition. Add breadcrumbs and vanilla essence. Add flour and fold in. Spoon jam into a buttered 900 ml pudding bowl. Pour in batter. Tie baking paper over the top. Place bowl in a large saucepan and add enough boiling water to come halfway up the sides. Cover saucepan and cook at a medium boil for 1 hour, adding more boiling water as necessary to keep up the level. Remove bowl from water, run a knife around the edge of pudding and turn upside-down over a plate. Serve hot with cold cream.
