Ingredients (9)

4.00 kingklip — fillets
4.00 banana leaves — large, squares
0.50 lemongrass — stalk, finely chopped
2.00 spring onion — chopped
2.00 garlic — cloves, crushed
1.00 lemon — sliced
45.00 ml lime juice
250.00 ml fresh coriander — chopped
4.00 green chilli — chopped

Method:

Place a piece of fish in the middle of each banana leaf.
Mix together the remaining ingredients and spoon some mixture over each piece of fish.
Fold the banana leaf over and secure with a toothpick.
Pop into a steamer and steam for 10 minutes.
Serve with fresh peas.
