Ingredients (16)

200.00 g kingklip — or kabeljou
200.00 ml water
1.00 fresh chives — finely chopped
2.00 celery stalks — finely chopped
1.00 red pepper
1.00 green pepper
1.00 garlic — cloves, chopped
5.00 ml fresh ginger — finely grated
fresh coriander
10.00 ml fish sauce
10.00 ml lemon juice
5.00 ml oyster sauce
7.00 ml sugar
salt and freshly ground black pepper
lemon — choppedd
fresh chillies — chopped, to serve

Method:

Blanch the fish in the water until it just begins to turn white. Add the rest of the ingredients (except the sauces, juice, sugar, salt and pepper) and heat until the vegetables are just done. Add the fish sauce, lemon juice, oyster sauce and sugar. Adjust the seasoning with salt, pepper, sugar and lemon juice. Serve with finely chopped fresh lemon and finely chopped red and green chillies. Serves 4.
