Steamed chocolate and cherry pudding

Ingredients (10)

350.00 g flour — cake
salt — pinch
10.00 ml Baking powder
160.00 g butter
200.00 g sugar
2.00 eggs — beaten
10.00 ml vanilla — essence
230.00 ml milk
425.00 g cherries — pitted
100.00 g dark chocolate — grated

Method:

1. Sift flour, salt and baking powder into a bowl. Cream butter in a separate bowl. Add sugar gradually, creaming until pale and fluffy. Beat eggs in thoroughly. Fold vanilla-flavoured milk into creamed mixture alternately with flour mixture.
2. Place 3-4 large spoonfuls of pudding mixture in a buttered 2 litre (8 cup) pudding bowl. Add spoonfuls of cherries and chocolate. Continue layering until all ingredients have been used.
3. Cover pudding bowl with a double thickness of foil, making a pleat across the centre to allow for expansion during teaming. Tie string tightly around rim. Place on a trivet in a large saucepan. Add boiling water to saucepan (see tips).
4. Steam, covered, over high heat until steam begins to escape. Reduce heat to moderate and continue steaming for about 2 hours, or until pudding is firm to the touch and a skewer inserted in the centre comes out clean.
5. Take saucepan from stove, remove pudding bowl. Set aside for 5 to 10 minutes. Carefully remove string and foil and turn out pudding (see tips).
